
Spinach Quinoa Salad
We are introducing our favorite quinoa salad! This dish is a perfect side or as a main course. The mix is simple, and the flavor is on point. Follow our easy steps below.
Ingredients:
1 cup cooked Quinoa
One scoop KOYAH spinach (or 1 cup chopped fresh spinach)
2 tbsp olive oil
One can of garbanzo beans (rinsed & drained)
1/2 cup chopped cilantro
1/2 cup cherry tomatoes
1/4 cup diced red onion
One scoop KOYAH lemon powder (or one freshly squeezed lemon)
1/2 tbsp liquid amino acids
1/2 tbsp garlic powder
salt and pepper to taste
Step 1. Cook the quinoa. Combine quinoa and water in a medium saucepan. Bring to boil over medium-high heat. Once boil, decrease heat to a simmer. Cook until the quinoa has absorbed all the water.
Step 2. Chop the tomatoes, red onion, and cilantro.
Step 3. Combine all the ingredients into a bowl and stir until everything is evenly mixed.
This salad is enjoyable warm or cold.
