These Protein Packed Spinach Balls are amazing! Super simple and easy to make. They're a great on the go snack. Gluten Free, vegan and straight up delicious!
Lets get the balls rolling.
In your blender mix:
1 cup dates (best if you soak them in water for 5-10 minutes, then pour out remaining water)
1/2 cup pumpkin seeds
1/2 cup walnuts
A dollop of maple syrup
Blend until everything is well mixed. Once mixed add to a separate bowl and combine the remaining ingredients.
Mix in the remaining ingredients together:
1/2 cup peanut butter
1/2 cup almond butter
1/3 cup coconut flakes
1/3 cup dark chocolate chips
1 scoop KOYAH spinach
Mix and work the "batter" until you're happy with the texture. Roll the balls to your preferred size. These store best in the fridge. This recipe makes about 12-15 small-medium size balls.
