Cucumber salad is a classic. This summery mix is the perfect healthy combo, especially when you combine vinegar, a dash of maple syrup and celery powder in a bowl of thinly sliced cucumbers and radishes.
2 cucumbers peeled and thinly sliced
1 bushel of radishes thinly sliced
1 can garbanzo beans (rinsed and drained)
1 tbsp maple syrup
1/2 cup plus an extra splash white vinegar
dash of salt, pepper and garlic powder
1 cup diced cherry tomatoes
1 scoop celery powder (or 1/2 cup of freshly diced celery)
Step 1. Either thinly slice or spiralize the cucumbers
Step 2. Thinly slice the radishes
Step. 3 Add the rest of the ingredients and stir
Step 4. Cover and place in fridge for at least 1 hour. The longer this sits the better.
